Insanely Cheesy Mac…My Way!

My kids don’t ask for boxed Macaroni & Cheese. They love my homemade version so much and that makes me happy! My son requests me to make it at least a couple times a month, so it was fun to get him involved and he was actually surprised at how many ingredients went into it. He thought it was mostly just noodles and cheese. 🙂 I reminded him that you need to add in spices to create the balance of flavor. He can totally make it himself next time. 🙂 

I start with a rue. My rue for this is different than others. Melting a stick of butter, dried mustard, sea salt, cracked black pepper, onion powder, garlic powder and Lawry’s Seasoning Salt makes it all amazing! Once melted, add in 1/2 cup of flour and cook on medium low for about 5 mins, while constantly whisking. (You don’t want it to burn!) Then add in the milk and bring to a light dinner, constantly whisking as to not scald the mixture. 
Cheese! Oh my goodness- we added 5 types of cheese from what we had in our fridge, anything works! All in all, you want to add in 1 1/2-2cups of cheese. You can even break up slices. It really doesn’t matter because it will all melt! Pour over al dente macaroni noodles and stir into all noodles are covered. 
Breadcrumb time! I use Panko breadcrumbs- just a personal preference. 🙂 Melt 1/4 c butter and then add in 1 1/2 c breadcrumbs, tossing to coat. Put breadcrumb mixture on top of mac and cheese, spreading evenly. Sprinkle with a little more sea salt and cracked black pepper. Cover worth foil. Bake at 400 degrees for 20-25 mins, then remove foil and cook for an additional 3-5 mins. So easy!

Ingredients:

1 box of macaroni noodles

1 stick plus 1/4 cup butter

1 tsp cracked black pepper

1 tsp sea salt

1 tbsp dry mustard

1/2 tsp Lawry’s Sessoning Salt

1 tsp garlic powder

1 tsp onion powder

1/2 c flour

2 cups milk (I use organic 1%)

1 1/2- 2 cups cheese- any combination that melts well.

1 1/2 cups Breadcrumbs

My son told me this was THE BEST I’ve ever made. Made my heart feel all warm and fuzzy when he said that. Such a sweetie! ❤️
